+1 on roasted veggies but i also love making at home hot pot it’s so easy to just throw a bunch of protein and produce in some soup and call it a meal. also whatever method you use to cook your protein, just put veggies in it (ex. stir frying, air fry, boiling, etc)

Small tip: Fresh vegetables taste 10x better than frozen. Even though they're slightly more expensive, 100% worth it, I personally guarantee that if you swap out the frozen veg for the real deal you'll start liking the taste more. Roasted vegetables are literally one of my favourite things to eat

ok ill try it out but all my fresh veggies always go bad cause i dont eat them in time, what do u usually get and how do u cook them (besides onions, which i know youve given up)

typically speaking the more watery and delicate a veggie is the more easily it goes bad vs dryer veggies. example is like leafy greens or tomatoes vs brussel sprouts or sweet potato. some veggies last a surprisingly long time (~2 weeks). if it’s starting to go bad then batch cook it and that makes it last a few days longer. also adopting the mindset that every meal you eat could probably use more veggies. i frequently will just dump like an egregious amount of veggies in all my meals to the point im kind of just eating veggies but volume + fiber = satiation
